SHROVE Tuesday is the day of the year to ditch that New Year’s diet and indulge in an absurd quantity of delicious pancakes.

We will be featuring Hamilton’s Pancakes for both breakfast and dessert, with an array of irresistible toppings.

Our Pancakes have famously been tried and tested on our Sunday Brunch Menus and our Head Chef has decided to share his recipe and hints and tips to making the best Pancakes in Wolverhampton

What’s the best pancake mixture recipe?

There are numerous ways to make pancakes – after all, the day originates from using up what is left in your cupboard.

While you may be fan of thicker, American style pancakes, or thin French type crepes, this traditional English pancake recipe is bound to win you over – and it’s super easy too.

You will need:

  • 125g of plain flour
  • 2 eggs, medium sized
  • 300ml of milk
  • Pinch of salt

Method

  • Beat the eggs together with a fork
  • Pour the flour into a bowl and make a well in the middle
  • Pour the eggs into the well and whisk together
  • Gradually, add in the milk
  • Put the mixture in the fridge for at least 30 minutes
  • Rub oil around a non-stick pan
  • Ladle out your mixture – one ladle equals one pancake
  • After a couple of minutes, give your pancake a jiggle and when it no longer sticks give it a flip to do the other side

Top 5 Tips to Making the Best Pancakes

TIP One – Using the right pan prevents the pancake from sticking. A Good solid pan with a rounded join between the rim and base is probably the best

TIP Two – Don’t use too much butter

Unsalted butter is the best when lubricating your pan, but watch out not to burn the butter if your pan is too hot. Brush a thin layer on with kitchen paper.

TIP Three – Flipping Practice, nice and thin pancakes makes flipping a little easier, don’t be disheartened if you don’t flip well the first time. Maybe ask your friends and family to hide when you make the first ones.

TIP Four – Toppings – going traditional with lemon juice and sugar is always a winner. But jazz it up with some Hamiltons Restaurant suggested toppings. Nutella and Banana, Crepe Suzette, caramelised berries and vanilla ice cream
